Uraian :
Adas merupakan satu dari sernbilan tumbuhan obat yang dianggap berrnukjizat di Anglo-Saxon. Di Indonesia telah dibudidayakan dan kadang sebagai tanarnan bumbu atau tanaman obat. Turnbuhan ini dapat hidup dari dataran rendah sampai ketinggian 1.800 m di atas permukaan laut, namun akan tumbuh lebih baik pada dataran tinggi. Asalnya dari Eropa Selatan dan Asia, dan karena manfaatnya kemudian banyak ditanam di Indonesia, India, Argentina, Eropa, dan Jepang. Terna berumur panjang, tinggi 50 cm - 2 m, tumbuh merumpun. Satu rumpun biasanya terdiri dari 3 - 5 batang. Batang hijau kebiru- biruan, beralur, beruas, berlubang, bila memar baunya wangi. Letak daun berseling, majemuk menyirip ganda dua dengan sirip-sirip yang sempit, bentuk jarum, ujung dan pangkal runcing, tepi rata, berseludang warna putih, seludang berselaput dengan bagian atasnya berbentuk topi. Perbungaan tersusun sebagai bunga payung majemuk dengan 6 - 40 gagang bunga, panjang ibu gagang bunga 5 - 1 0 em, panj' ang gagang bunga 2 - 5 mm, mahkota berwarna kuning, keluar dari ujung batang. Buah lonjong, berusuk, panjang 6 - 10 mm, lebar 3 - 4 mm, masih muda hijau setelah tua cokelat agak hijau atau cokelat agak kuning sampai sepenuhnya cokelat. Namun, warna buahnya ini berbeda-beda tergantung negara asalnya. Buah masak mempunyai bau khas aromatik, bila dicicipi rasanya relatif seperti kamfer. Adas menghasilkan minyak adas, yang merupakan basil sulingan serbuk buah adas yang masak dan kering. Ada dua macam minyak adas, manis dan pahit. Keduanya, digunakan dalam industri obat-obatan. Adas juga dipakai untuk bumbu, atau digunakan sebagai bahan yang memperbaiki rasa (corrigentia saporis) dan mengharumkan ramuan obat. Biasanya adas digunakan bersama-sama dengan kulit batang pulosari. Daunnya bisa dimakan sebagai sayuran. Perbanyakan dengan biji atau dengan memisahkan anak tanaman.

BAGIAN YANG DIGUNAKAN :
Buah masak (Xiaohuixiang, hui-hsiang). Buah yang telah masak dikumpulkan, lalu dijemur sampai kering.

KEGUNAAN:
Buah bermanfaat untuk mengatasi :
- sakit perut (mulas), perut kembung, rasa penuh di lambung, mual,
muntah, diare,
- sakit kuning (jaundice), kurang nafsu makan,
- batuk berdahak, sesak napas (asma),
- haid: nyeri haid, haid tidak teratur,
- air susu ibu (ASI) sedikit,
- putih telur dalam kencing (proteinuria),
- susah tidur (insomnia),
- buah pelir turun (orchidoptosis),
- usus turun ke lipat paha (hernia inguinalis),
- pembengkakan saluran sperma (epididimis),
- penimbunan cairan di dalam kantung buah zakar (hidrokel testis),
- mengurangi rasa sakit akibat batu dan membantu menghancurkannya,
- rematik gout, dan
- keracunan tumbuhan obat atau jamur.

Daun berkhasiat mengatasi :
- batuk,
- perut kembung, koilk,
- rasa haus, dan
- meningkatkan penglihatan.

CARA PEMAKAIAN :
Buah adas sebanyak 3 - 9 g direbus, minum atau buah adas digiling halus, lalu diseduh dengan air mendidih untuk diminum sewaktu hangat. Daun dimakan sebagai sayuran atau direbus, lalu diminum.
Pemakaian luar, buah kering digiling halus lalu digunakan untuk pemakaian lokal pada sariawan, sakit gigi, sakit telinga dan luka.
Minyak adas juga dapat digunakan untuk menggosok tubuh anak yang masuk angin.

CONTOH PEMAKAIAN :
1. Batuk
a. Siapkan serbuk buah adas sebanyak 5 g disedub dengan 1/2
cangkir air mendidih. Setelah dingin disaring, tambahkan 1 sendok
teh madu. Aduk sampai merata, minum sekaligus. Lakukan 2 kali
sehari, sampai sembuh.

b. Siapkan daun saga 1/4 genggam, bunga kembang sepatu 2
kuntum, daun poko 1/5 genggam, bunga tembelekan 10 kuntum,
bawang merah 2 butir, adas 1 sendok teh, pulosari 1 jari, rimpang
jahe 1 jari, gula merah 3 jari, dicuci dan dipotong-potong
seperlunya. Rebus dengan 3 gelas air bersih sampai tersisa
setengahnya. Setelah dingin disaring, lalu diminum. Lakukan 3 kali
sehari, masing-masing 1/2 gelas.

2. Sesak napas
a. Ambil minyak adas sebanyak 10 tetes diseduh dengan 1 sendok
makan air panas. Minum selagi hangat. Lakukan 3 kali sehari,
sampai sembuh.

b. Siapkan adas 1/2 sendok teh, pulosari ¼ jari, rirnpang kencur 2
jari, rirnpang temulawak 1 jari, jintan hitam 114 sendok teh, daun
poncosudo (Jasminum pubescens) 1/4 genggam, gula merah
3 jari, dicuci dan dipotong-potong seperlunya. Baban-bahan tadi
lalu direbus dengan 4 1/2 gelas air bersih sampai tersisa kira-kira
separonya. Setelah dingin disaring, dan siap untuk diminum.
Sehari 3 kali, masing-masing 3/4 gelas.

3. Sariawan
Siapkan adas 3/4 sendok teh, ketumbar 3/4 sendok teh, daun iler
1/5 genggam, daun saga 1/4 genggam, sisik naga 1/5 genggam,
daun sembung 1/4 genggam, pegagan 1/4 genggam, daun kentut
1/6 genggam, pulosari 3/4 jari, rimpang lempuyang wangi 1/2 jari,
rimpang kunyit ½ jari, kayu manis ¾ jari, gula merah 3 jari, dicuci
dan dipotong-potong seperlunya. Bahan-bahan tadi lalu direbus
dengan 4 1/2 gelas air bersih sampai tersisa separonya. Setelah
dingin disaring, siap untuk diminum. Sehari 3 kali, setiap kali cukup
3/4 gelas.

4. Haid tidak teratur
Siapkan daun dan bunga srigading masing-masing.1/5 genggam,
jinten hitam 3/4 sendok teh, adas 1/2 sendok teh, pulosari 1/2 jari,
bunga kesumba keling 2 kuntum, jeruk nipis 2 buah, gula batu
sebesar telur ayam, dicuci lalu dipotong-potong seperlunya.
Bahan-bahan tadi lalu direbus dengan 3 gelas air bersih sampai
tersisa 2 1/4 gelas. Setelah dingin disaring, minurn 3 kali sehari,
masing-masing 3/4 gelas. Keracunan tumbuhan obat atau jamur
Siapkan serbuk buah adas sebanyak 5 g, lalu seduh dengan
setengah cangkir arak. Minum selagi hangat.

5. Batu empedu
Serbuk buah adas sebanyak 5 g diseduh dengan 1 cangkir air
panas. Min

Komposisi :
SIFAT KIMIAWI DAN EFEK FARMAKOLOGIS Buah : buah masak mengandung bau aromatik, rasa sedikit manis, pedas, hangat, masuk meridian hati, ginjal, limpa, dan lambung. Daun : berbau aromatik Minyak dari buah : minyak adas (fennel oil). KANDUNGAN KIMIA : Adas mengandung minyak asiri (Oleum Foeniculi) 1 - 6%, mengandung 50 - 60% anetol, lebih kurang 20% fenkon, pinen, limonen, dipenten, felandren, metilchavikol, anisaldehid, asam anisat, dan 12% minyak lemak. Kandungan anetol yang menyebabkan adas mengeluarkan aroma yang khas dan berkhasiat karminatif. Akar mengandung bergapten. Akar dan biji mengandung stigmasterin (serposterin). Efek Farmakologis dan Hasil Penelitian : 1. Komponen aktifnya, anisaldehida, meningkatkan khasiat streptomycin untuk pengobatan TBC pada tikus percobaan. 2. Meningkatkan peristaltik saluran cerna dan merangsang pengeluaran kentut (flatus). 3. Menghilangkan dingin dan dahak. 4. Minyak adas yang mengandung anetol, fenkon, chavicol, dan anisaldehid berkhasiat menyejukkan saluran cerna dan bekerja menyerupai perangsang napsu makan. 5. Dari satu penelitian pada manusia dewasa, diternukan bahwa adas mempunyai efek menghancurkan batu ginjal. 6. Pada percobaan binatang, ekstrak dari rebusan daun adas dapat menurunkan tekanan darah. Namun, pengolahan cara lain tidak menunjukkan khasiat ini.

الشومر أو الشمر أو السنوت أو الرازيانج أو الشمار أو البسباس أو الشمرة أو الشمر المر، الشمر الحلو، الحلوة، الحبة الحلوة، حبة الحلاوة العربية، الشمر الكبير، شمر الحدائق أو الشمر الوحشي، الشمر الزهري نبات عطري يتبع الفصيلة الخيمية ويسمى (باللاتينية: Foeniculum vulgare).

يستعمل النبات لأغراض طبية.

الموطن

نبات شبه سنوي، ينمو بالبراري في معظم اجزاء أوروبا المعتدلة مناخاً، خصوصاً شواطئ البحر الأبيض المتوسط، ويمتد شرقاً لغاية الهند. والشمر البري موجود حول بقاع العالم قاطبة، ولاستعمالات الشمر الطبية، خاصة البذور، فهو يزرع بكثرة في سورية وجنوب فرنسا وسكسونيا، روسيا، إيران، والهند.

تاريخ الشمر

عرفه القدماء، وزرعه الرومان، وقد وصف pliny بأن للشمر حوالي عشرين نوعاً من الاستطباب والفوائد الطبية ملاحظاً بأن الثعابين تأكل منها عندما تخلع جلدها، كما تقوي الافاعي نظرها بفركها بالشمر لكي ينساب عصير النبتة إلى داخل العين، كما يعتقد بهذه النظرية علماء النبات القدماء. جاء ذكر الشمر في كتب الطبخ والطب، كذلك جاء ذكر الشمر في السجلات الزراعية الإسبانية المؤرخة. لعب الامبراطور شارلمان دوراً مهماً في نشر زراعة الشمر ودخوله وسط أوروبا حيث كان يعجب بزراعة الشمر في حدائق الإمبراطورية.

تركيبته

إن نسب تركيبة الشمر في الاخلاط التجارية الخاصة بالشمر هي متغيرة وغير ثابتة.

- زيت Fenchone وهو الذي يعطي الفائدة الطبية الخاصة بالشمر.

- زيت alfa.

- زيت Phellandrine.

- حامض Anisic acid.

- Anisic aldehyde.

- أحياناً Limonine.

أهميته في الطب القديم

استخدم الشومر منذ آلاف السنين لعلاج كثير من الأمراض، فقد استخدمه الفراعنة تحت اسم شماري وعثر علماء الآثار على ثماره في مقابر بن حسن ودهشور، بينما ورد ذكره في بردية هاريس الطبية تحت اسم "شامارن"، ومن المعروف أن اسمه بالقبطية القديمة "شمارهوت" بينما ورد في بردية ايبرز وبرلين تحت اسم "بسباس" الذي احتفظ به العرب وحرفوه بعد ذلك إلى بسباسة. وقد ورد الشمر في بردية هيرسيت كمنبه عطري للمعدة، أما في بردية ايبرز الطبية فعلاج انتفاخ البطن وكثرة الغازات، ويدخل ضمن عدة وصفات لعلاج نزلات البرد وتسكين الآلام. ويستعمل زيت السنوت في صناعة العطور وبعض المواصفات الطبية.

أما في الطب العربي فقد ورد عن السنوت عدة أحاديث، فقد ورد عن إبراهيم عن أبي عبلة قال: سمعت عبد الله ابن أم حرام وهو ممن صلى مع النبي محمد صلى الله عليه وسلم القبلتين "عليكم بالسنا والسنوت، فإن فيهما شفاء من كل داء". اخرجه ابن ماجة في السنن. وذكر عبد الملك بن حبيب قال: عن أنس بن مالك رضي الله عنه ان رسول الله صلى الله عليه وسلم قال "عليكم بأربع فيهن شفاء من كل داء إلاّ من السام (وهو الموت) السنا والسنوت والثغاء والحبة السوداء".

ذكر في الطب القديم أن للسنوت نوعان بري والستاني ومنه صنفان نبطي ورومي، وأشاد الأطباء القدماء من عرب وغيرهم بفوائده ومنها أنه يفتح السدد ويحد البصر وخصوصاً صمغه، ويفرز الحليب ويدر البول والطمث ويفتت الحصاة وبالأخص ما كان منه رطباً طرياً. ويحلل الرياح وينفع من التهيج في الوجه وورم الأطراف، والتبخر به يسكن الصداع ويدفع ضرر السموم والهوام. وكان للسنوت تاريخ قديم فقد زرعه الصينيون القدماء والهندوس والمصريون وزرعه الرومان وأكلوا عروقه وأوراقه العطرة الزكية الرائحة. وكان السنوت من أفضل المواد الطبية المستخدمة في العصور الوسطى وكانت تضاف أوراقه الطازجة إلى مأكولات السمك والخضروات وذلك عند الأغنياء، أما الفقراء فتوكل أوراقه كمادة مشهية في أيام الصيام.


أهميته في الطب الحديث

درس السنوت دراسة مستفيضة، وأثبت الألمان ان السنوت من أفضل الأعشاب لعلاج تعب المعدة وكذلك مشاكل الهضم ولعلاج النفخة والغازات وكذلك لإزالة المغص، وذكر ان أفضل طريقة لاستخدامه هو سحق ثماره ووضعها في كأس مملوء بالحليب وشربه، كما أوصوا بأنه يمكن ان يعطي للأطفال دون سن الثانية كمضاد لآلام المغص وذلك بسحق ملعقة صغيرة ونقعها في ملئ فنجان قهوة عربي لمدة 15دقيقة ثم يسل الماء ويضاف إلى حليب الطفل، ويمكن ان يعطوا الأطفال نفس الوصفة لإيقاف الاسهال. كما يمكن استخدام السنوت لتهدئة وتنويم الأطفال.

أثبت العلماء ان مركب الاستراجول الموجود في السنوت له تأثير مشابه لتأثير الهرومات الانثوية حيث اتضح أنه يزيد من افراز الحليب لدى المرضعات ويساعد في ادرار الطمث بالإضافة إلى تنشيط الناحية الجنسية لدى النساء ويخفف الشبق الجنسي لدى الرجال. كما أثبتت السلطات الصحية الألمانية استعمال السنوت في أشكال مختلفة مثل الأشربة مثل شراب العسل بالسنوت لعلاج احتقان الجهاز التنفسي حيث يذيب المخاط المفرز في قنوات الجهاز التنفسي وبالتالي يعمل كطارد للبلغم. وأصبح السنوت في كثير من دساتير الأدوية الأوروبية ليستخدم لهذا الغرض، كما أثبتت الدراسات العلمية ان للسنوت تأثيراً قاتلاً لبعض أنواع البكتيريا ولهذا يستخدم لايقاف الاسهال المتسبب عن البكتيريا. وهناك عدة وصفات ولكن سوف نتعرض لأهمها مثل:

- علاج الاضطرابات الهضمية والإمساك يشرب فعلى ثمار السنوت بمعدل ملئ ملعقة أكل من مجروش السنوت تضاف إلى ملئ كوب ماء مغلي ويترك لمدة 20دقيقة ثم يشرب مع السنوت مرة في الصباح وأخرى في المساء.

- للمشاكل البولية مثل حص الكلى أو الاضطرابات المرتبطة بارتفاع نسبة حمض اليوريك في اليوم يستخدم جذور السنوت بمعدل ملئ ملعقة من مسحوق السنوت تضاف إلى ملئ كوب ماء مغلي ويترك لمدة 15دقيقة ثم يشرب كاملاً مرة في الصباح وأخرى في المساء.

- يستعمل مغلياً جميع أجزاء السنوت غرغرة لعلاج التهابات الفم واللثة.

- يستعمل مغلياً أوراق السنوت كحقنة شرجية لعلاج المغص عند الأطفال.

المحاذير من استعمال الشمر

هناك بعض المحاذير وخاصة عند استعمال زيت السنوت حيث إنه مركز واستخدام جرعة عالية منه تسبب احتقاناً وهبوطاً في القلب وكذلك دوخة وغثيان بالإضافة إلى ظهور طفح جلدي وربما يسبب حدوث نوبة تشنجية تشبه نوبة الصرع.

الاستعمال الطبي

من الخارج

يستعمل مغلي مسحوق الجذور للغرغرة في التهاب الفم أو لغسل العين أو تكميدها عند اصابتها بالتهاب الملتحمة(الرمد) أو إجهادها في القراءة أو الكتابة أو غير هذا وذلك بإضافة فنجان من الماء الساخن بدرجة الغليان إلى مقدار ملعقة صغيرة من مسحوق الجذور لمدة (10) دقائق.

وتستعمل أوراق الشمرة الغضة لمعالجة التسلخات في الأعضاء التناسلية أو جوارها وفي الثدي أيضا وذلك بوضع الأوراق الغضة فوق موضع الإصابة وتثبيتها بضماد وتستعمل الأوراق المسلوقة أيضا بتثبيتها ساخنة فوق البطن لطرد الغازات وتسكين الآلام الناتجة عنها في الأمعاء حتى عند الأطفال.

من الداخل

لمعالجة الالتهابات في الجلد المخاطي (النزلة الشعبية والسعال في الصدر) ونوبات الربو والسعال الديكي والتهاب الحنجرة (بحة الصوت) وسوء الهضم في المعدة والأمعاء في إصابتها الحادة والمزمنة وحتى في حالات سرطان المعدة وكذلك تستعمل لمعالجة التالبولي حوض الكلى والمثانة والمسالك البولية.

ومغلي الشمرة علاج مفيد جداً في جميع الحالات المذكورة خصوصاً عند الأطفال والشيوخ والمنهوكي القوى من إزمان المرض فهو يغسل الجلد المخاطي ويزيل عنه إفرازات الالتهاب ويسكن بذلك الآلام الناتجة عنها بذلك الآلام الناتجة عنها.

ويمكن للحامل إن تشرب القليل من مغلي الشمرة أيضا لمعالجة ما قد تصاب به من اضــــطراب الهضم كالإمساك والغازات المعوية والغثيان أو القيء وكذلك الأطفال الرضـــــــع ولا يفوتنا إن نذكر إن مغلي حبيبات الشمرة يدر إفراز الحليب عند الرضع. ويعمل مغلي حبيبات الشمرة بإضافة فنجان من الماء الساخن بدرجة الغليان إلى مقدار ملعقة صغيرة من الحبيبات المهروسة ويشرب مـــنه مـــــقدار (2-3) فناجين يومياًًً.

أما للأطفال الرضع فيكتفي لعمل مغلي حبيبات الشمرة كما ذكرنا بكمية اقل من ربع ملعقة صغيرة من الحبيبات المسحوقة ويمكن غليها بالحليب مع الماء

تعرض لهذا النبات جلّ علماء العربية القدماء، وكذلك بعض الباحثين المحدثين، بغية الوصول إلى تحديد هذا النوع من النبات لما ذُكر من فوائده في أحاديث المصطفى صلى الله عليه وسلم التي من بينها قوله : ((لو كان شيء ينجي من الموت لكان السَّنا والسنوت)) ([36]) علاوة على ما ورد في الأثر والتراث العربي عنه.


أما ما ذكره بعض اللغويين عن هذا النبات فيقول أبي حنيفة : ((أخبرني أعرابي من أعراب عمان قال : السنوت عندنا الكمون. وقال : وليس من بلادنا ولكن يأتينا من كِرمان. وقال لي غيره من الأعراب : هو الرازيانج ونحن نزرعه، وهو عندنا كثير. وقال : هو رازيانجكم هذا بعينه قال الشاعر:

هم السمن بالسنوت لا ألس فيهم... وهم يمنعون جارهم أن يقردا


وقد أكثر الناس فيه، فقال بعض الرواة : السنوت هاهنا الشمر، وقيل : الرّب.

وقيل : العسل، وقيل : الكمون. وقال ابن الأعرابي : هو حب يشبه الكمون وليس به)) ([37]). وقال أبو حنيفة في موضع آخر([38]) إنه السِّبت، أي الشِّبت.


ومما سبق يتضح لنا خلاف العلماء حول تحديد هذا النوع من النبات. والراجح أن قول ابن الأعرابي هو الصحيح ؛ لأنَّ غالبية من يقطنون السراة يجمعون على هذه التسمية، وهو كما قال ابن الأعرابي يشبه الكمون لدرجة اللبس، ولكن المدقق في النباتين يلحظ الفرق بينهما. فنبتة الكمون تتقارب سوقه وتتفرع، وثمرته مجتمعة مع بعضها، أما السنوت فكل ساق ينبت على حدة من أصل الجذر، وثمرته دائرية، ولكنها متفرقة. كما أن حبوب ثمرة الكمون، تختلف عن حبوب السنوت، فالأولى بنية اللون، والثانية خضراء. وقد قارنت بين النباتين مقارنة عملية، بغية التعرف على الفروق الدقيقة بين النبتتين، فوقفت على الفروق السابقة.


أما ما ورد في بيت الحصين بين القعقاع، فالراجح أنّ المقصود به العسل، وليس النبات ؛ لأن العرب دائماً يقرنون بين السمن والعسل. وعلى هذا فتكون كلمة السنوت من كلمات المشترك اللفظي ويكون الفيصل في تحديد دلالتها السياق الواردة فيه الكلمة.

وما زال أهل هذه المنطقة بل أهالي السراة يُجمعون على أن هذه التسمية تطلق على هذا النوع من النبات. أما نطقهم للكلمة فبفتح السين وضم النون مع تشديدها وهي لغة فصيحة قال ابن الأثير : ((ويروى بضم السين والفتح أفصح ((أ. هـ.

وتستخدم بذور (ثمار) الشمر لتفريج انتفاخ البطن وتهدئ آلام المعدة وتنبه الشهية وهي مدرة للبول ومضادة للالتهابات، كما تستخدم البذور لالتهابات الحلق ومقشعاً معتدلاً لإخراج البلغم والشمر مأمون للاطفال ويمكن ان يعطي كنقيع أو فعلي لعلاج المغص وضد التسنين المؤلم عند الرضع ويدر حليب الثدي كما يستعمل مغلي بذور الشمر لعلاج وتسكين نوبات السعال وذلك بأخذ ملء ملعقة كبيرة من مطحون بذور الشمر في كوب زجاجي ثم يصب عليها الماء المغلي فوراً ويغطى لمدة 10دقائق ثم يصفى ويشرب بواقع كوب بعد كل وجبه غذائية يومياً.


علاج القولون والقلون العصبي:

أكل الشمر أمان من القولنج (أكل الشمر) بالتحريك هو معروف (أمان من) حدوث (القولنج) بضم القاف وفتح اللام وهو تعقد الطعام في الأمعاء فلا ينزل فيصعد بسببه بخار إلى الدماغ فقد يفضي إلى الهلاك. قال الأطباء: وهو محلل للرياح الغليظة شديد النفع من وجع الجنبين نافع من الأخلاط التي في المعدة ويدفع حرقة المعدة من البلغم الحامض ويشفي وجع الكلى والمثانة وينفع من نهش الهوام وهو بستاني وبري والظاهر إرادتهما في الحديث معاً. ذكره (أبو نعيم في) كتاب (الطب) النبوي (عن أبي هريرة) وضعفه السيوطي.


يفضل عدم استعمال المرأة الحامل للسنوت كدواء لأنه يسبب تنشيط الرحم، أما إذا كانت تستخدمه استخداماً عادياً مع الأكل وما شابه ذلك فلا ضرر من ذلك.

استعمالات وفوائد الشمر الطبية :

1. رائحته طيبة ويعتبر مكرعاً ومجشأً ويستعمل مع المسهلات لإزالة الآثار الجانبية للأدوية المسهلة، مثل المغص، وعادة يُخلط مع السوس.

2. ماء الشمر (العصير) له نفس المفعول الخاص باليانسون وعادة يمزج الثلاثة : ماء الشمر، ماء الكربونة واليانسون لإعطاء ادوية طبية مثل ما يسمى ماء الغريب، وهو يستعمل لإزالة الارياح والنفخة والمغص عند الاطفال.

3. يستعمل الشمر في معالجة امراض الصدر والسعال، أزمات الربو، الحساسية، وتشنج القصبات الهوائية (شمر مغلي + عسل).

4. البراغيث لا تحب رائحة الشمر، ولذلك تنثر بودرة الشمر لطرد البراغيث من الاسطبلات.

5. استعمل الايطاليون والفرنسيون اوراق الشمر في السلطة مع بقية الخضار، اما عند الرومان فقد استعمله الخبازون بوضعه في الافران تحت ارغفة الخبز لإعطاء الارغفة طعماً ونكهة طيبة.

Fennel (Foeniculum vulgare), is a plant species in the genus Foeniculum (treated as the sole species in the genus by most botanists). It is a member of the family Apiaceae (formerly the Umbelliferae). It is a hardy, perennial, umbelliferous herb, with yellow flowers and feathery leaves. It is generally considered indigenous to the shores of the Mediterranean, but has become widely naturalised elsewhere (particularly, it seems, areas colonized by the Romans[1]) and may now be found growing wild in many parts of the world, especially on dry soils near the sea-coast and on river-banks.

It is a highly aromatic and flavorful herb with culinary and medicinal uses, and is one of the primary ingredients of absinthe. Florence fennel or finocchio is a selection with a swollen, bulb-like stem base that is used as a vegetable.

Fennel is used as a food plant by the larvae of some Lepidoptera species including the Mouse Moth and the Anise Swallowtail.

Etymology and history

The word fennel developed from the Middle English fenel or fenyl. This came from the Old English fenol or finol, which in turn came from the Latin feniculum or foeniculum, the diminutive of fenum or faenum, meaning "hay". The Latin word for the plant was ferula, which is now used as the genus name of a related plant. As Old English finule it is one of the nine plants invoked in the pagan Anglo-Saxon Nine Herbs Charm, recorded in the 10th century.

In Ancient Greek, fennel was called marathon (μάραθον), and is attested in Linear B tablets as ma-ra-tu-wo. John Chadwick notes that this word is the origin of the place name Marathon (meaning "place of fennel"), site of the Battle of Marathon in 490 BC; however, Chadwick wryly notes that he has "not seen any fennel growing there now".[2] In Greek mythology, Prometheus used the stalk of a fennel plant to steal fire from the gods. Also, it was from the giant fennel, Ferula communis, that the Bacchanalian wands of the god Dionysus and his followers were said to have come.[3]

Fennel is a perennial herb. It is erect, glaucous green, and grows to heights of up to 2.5 m, with hollow stems. The leaves grow up to 40 cm long; they are finely dissected, with the ultimate segments filiform (threadlike), about 0.5 mm wide. (Its leaves are similar to those of dill, but thinner.) The flowers are produced in terminal compound umbels 5–15 cm wide, each umbel section having 20–50 tiny yellow flowers on short pedicels. The fruit is a dry seed from 4–10 mm long, half as wide or less, and grooved.[4]

Fennel is widely cultivated, both in its native range and elsewhere, for its edible, strongly-flavoured leaves and fruits, which are often mistermed "seeds".[5] Its aniseed flavour comes from anethole, an aromatic compound also found in anise and star anise, and its taste and aroma are similar to theirs, though usually not as strong.[5]

The Florence fennel (Foeniculum vulgare Azoricum Group; syn. F. vulgare var. azoricum) is a cultivar group with inflated leaf bases which form a bulb-like structure. It is of cultivated origin,[6] and has a mild anise-like flavour, but is more aromatic and sweeter. Florence fennel plants are smaller than the wild type.[citation needed] Their inflated leaf bases are eaten as a vegetable, both raw and cooked. There are several cultivars of Florence fennel, which is also known by several other names, notably the Italian name finocchio. In North American supermarkets, it is often mislabelled as "anise".[7][citation needed]

Foeniculum vulgare 'Purpureum', "bronze-leaved" fennel, is widely available in the UK where it is grown as a decorative garden plant.[8]

Fennel has become naturalised along roadsides, in pastures, and in other open sites in many regions, including northern Europe, the United States, southern Canada and in much of Asia and Australia. It propagates well by seed, and is considered an invasive species and a weed in Australia and the United States[9] (see Santa Cruz Island).

Florence fennel was one of the three main herbs used in the preparation of absinthe, an alcoholic mixture which originated as a medicinal elixir in Switzerland and became, by the late 19th century, a popular alcoholic drink in France and other countries. Fennel itself is known to be a stimulant,[10] although many modern preparations marketed under the name "absinthe" do not make use of it.[citation needed]


Culinary uses

The bulb, foliage, and seeds of the fennel plant are widely used in many of the culinary traditions of the world. Fennel pollen is the most potent form of fennel, but also the most expensive.[11] Dried fennel seed is an aromatic, anise-flavoured spice, brown or green in colour when fresh, slowly turning a dull grey as the seed ages. For cooking, green seeds are optimal.[5] The leaves are delicately flavored and similar in shape to those of dill. The bulb is a crisp, hardy root vegetable and may be sauteed, stewed, braised, grilled, or eaten raw.

Fennel seeds are sometimes confused with those of anise, which are very similar in taste and appearance, though smaller. Fennel is also used as a flavouring in some natural toothpaste.

Fennel features prominently in Mediterranean cuisine, where bulbs and fronds are used, both raw and cooked, in side dishes, salads, pastas, vegetable dishes such as artichoke dishes in Greece, and risottos. Fennel seed is a common ingredient in Italian sausages and meatballs and northern European rye breads.

Many cultures in the Indian subcontinent and the Middle East use fennel seed in their cookery. Fennel is one of the most important spices in Kashmiri Pandit cooking. It is an essential ingredient of the Assamese/Bengali/Oriya spice mixture panch phoron and in Chinese five-spice powders. It is known as saunf or mauti saunf in Hindi and Urdu (Devanagari सौंफ़, Perso-Arabic: سونف), sompu in Telugu, badesoppu in Kannada, mouri (মৌরি) in Bengali, shombu or peruncheeragam (பெருஞ்சீரகம்) in Tamil and Malayalam language, variyali(વરીયાળી) in Gujarati, badeeshop or badeeshep(Devanagiri बडीशेप) in Marathi and barishap in the Malay language, Razianeh or رازیانه in Persian, and Jintan Manis in Malay. In many parts of Pakistan and India roasted fennel seeds are consumed as an after-meal digestive and breath freshener. Farming communities also chew on fresh sprigs of green fennel seeds. Fennel leaves are used as leafy green vegetables either by themselves or mixed with other vegetables, cooked to be served and consumed as part of a meal, in some parts of India.

Many egg, fish, and other dishes employ fresh or dried fennel leaves. Florence fennel is a key ingredient in some Italian and German salads, often tossed with chicory and avocado, or it can be braised and served as a warm side dish. It may be blanched or marinated, or cooked in risotto.

Medicinal uses

Fennel seeds

Fennel contains anethole, which can explain some of its medical effects: it, or its polymers, act as phytoestrogens.[12]

Intestinal tract

On account of its carminative properties, fennel is chiefly used medicinally with purgatives to allay their side effects, and for this purpose forms one of the ingredients of the well-known compound liquorice powder.

Fennel water has properties similar to those of anise and dill water: mixed with sodium bicarbonate and syrup, these waters constitute the domestic 'gripe water', used to ease flatulence in infants; it also can be made into a syrup to treat babies with colic or painful teething. Long term ingestion of fennel preparations by babies is a known cause of thelarche.[13] For adults, fennel seeds or tea can relax the intestines and reduce bloating caused by digestive disorders[citation needed]. Essential oil of fennel has these properties in concentration.

Fennel tea, also employed as a carminative, is made by pouring boiling water on a teaspoonful of bruised fennel seeds.

Eyes

In the Indian subcontinent, fennel seeds are also eaten raw, sometimes with some sweetener, as it is said to improve eyesight. [citation needed] Ancient Romans regarded fennel as the herb of sight. Root extracts were often used in tonics to clear cloudy eyes. Extracts of fennel seed have been shown in animal studies to have a potential use in the treatment of glaucoma.[14]

Blood and urine

Some people use fennel as a diuretic,[citation needed] and it may be an effective diuretic and a potential drug for treatment of hypertension.[15][16]

Breastmilk

There are historical anecdotes that fennel is a galactogogue,[17] improving the milk supply of a breastfeeding mother. This use, although not supported by direct evidence, is sometimes justified by the fact that fennel is a source of phytoestrogens, which promote growth of breast tissue.[18] However, normal lactation does not involve growth of breast tissue. There is a single case report of fennel tea ingested by a breastfeeding mother resulting in neurotoxicity for the newborn child.[19]

Other uses

Syrup prepared from fennel juice was formerly given for chronic coughs. Fennel is also largely used for cattle condiments[citation needed]. It is one of the plants which is said to be disliked by fleas, and powdered fennel has the effect of driving away fleas from kennels and stables.[20]

Production

Syrian Arab Republic is the leader in production of anise, badian (star anise), fennel and coriander, followed by India.

Similar species

Many species in the family Apiaceae (formerly Umbelliferae) are superficially similar to fennel, and some, such as poison hemlock (see below) are toxic. It is therefore unwise, and potentially extremely dangerous, to use any part of any of these plants as a herb or vegetable unless it can be positively identified as being edible.

Dill, coriander and caraway are similar-looking herbs but shorter-growing than fennel, reaching only 40–60 cm; dill has thread-like, feathery leaves and yellow flowers; coriander and caraway have white flowers and finely divided leaves (though not as fine as dill or fennel) and are also shorter-lived (being annual or biennial plants). The superficial similarity in appearance between these may have led to a sharing of names and etymology, as in the case of meridian fennel, a term for caraway[21].

Cicely, or sweet cicely, is sometimes grown as a herb; like fennel, it contains anethole, and therefore has a similar aroma, but it is lower-growing (to 2 m), has large umbels of white flowers, and its leaves are fern-like rather than threadlike.

Giant fennel (Ferula communis) is a large, coarse plant, with a pungent aroma, which grows wild in the Mediterranean region and is only occasionally grown in gardens elsewhere. Other species of the genus Ferula are also commonly called giant fennel, but they are not culinary herbs.

The most dangerous plant which might be confused with fennel is probably hemlock (poison hemlock). Hemlock tends to grow near water or in consistently moist soil, is tall (0.75 – 2 m), has purple blotches on the main stem, and is heavily branched with small umbels of white flowers. A useful test to distinguish between it and fennel is to crush some leaves and smell them. Fennel smells like anise or liquorice, whereas the smell of poison hemlock is often described as mouse-like or musty. But take care: coniine, a toxin contained in poison hemlock, can be absorbed through the skin, so do not do this "smell test" with bare hands (and avoid touching your eyes or mouth) unless you can wash them immediately afterwards.

In the Mountain West of North America, poison hemlock has become well established and invasive, and can be found in remote mountain areas anywhere soils are persistently moist. It is often found growing in the same habitat and side by side with osha and Lomatium species, useful medicinal relatives in the parsley family, though Lomatium species tend to prefer dry rocky soils devoid of organic material.

Lomatium (which closely resembles hemlock, and can be very difficult to distinguish from it) is an important historical food plant of Native Americans known as biscuit root. Most Lomatium species have yellow flowers, like fennel, but some are white flowered and closely resemble poison hemlock. Most Lomatium have finely divided, hairlike leaves; their roots have a delicate rice-like odor, unlike the musty odor of hemlock.

Osha, Ligusticum porteri, has white flowers and finely-divided leaves, similar to poison hemlock but not as fine as fennel or dill. The leaves are intensely fragrant with a "spicy celery" odor, unlike the musty or "mousy" smell of poison hemlock, but care should be taken in checking this characteristic, as the fresh juice (of the roots) is astringent and can cause blistering.
